Fritz Knipschildt, award winning Maitre Chocolatier was born and raised in Odense, Denmark. Fritz worked as a chef in Denmark, Spain, France and New York before opening Knipschildt Chocolatier in 1999. Awarded 40 under 40 in Fairfield County, CT for extraordinary leadership & accomplishment. In 2005, moved Knipschildt Chocolatier to South Norwalk (CT) and opened Chocopologie Cafe. Chocopologie Cafe is a European style chocolate and dessert lounge as well as a retail store with an extensive variation of desserts, indulged in warm and trendy atmosphere.
